Rhubarb Jello Salad

Ingredients

  • 3 cups rhubarb, chopped
  • 1/2 cup sugar
  • 1/4 cup water
  • 1 3-oz box strawberry jello
  • 1/2 cold cup water
  • 1 cup whipped topping

Directions

Cook rhubarb, sugar, and water together until the rhubarb is tender. Stir in the jello and cold water. Refrigerate until Jello sets. Stir in whipped topping. If using frozen Rhubarb, you may want to use less water, you can add chopped fresh strawberries at the time you add the whipped topping.
